A small kitchen that cooks with the calendar

The menu is written on Monday, when we’re closed, from whatever the growers have that week. Most things go near the wood fire at some point. Pasta is rolled by hand every afternoon, and when a vegetable runs out, the dish comes off the menu.

The name comes from the juniper we cure, brine and sugar through the year. You’ll find it in the salt on the bread, the pork chop and the chocolate pot de crème.
